Understanding at least a little bit about this process can help you understand why some coffee tastes differently from others and can help you predict how some coffee could taste when you venture out into the world to try new and interesting coffees.
Coffee is actually a fruit, not a bean like many belief. The coffee cherry is usually a red or yellow fruit that contains two seeds that are surrounded by a soft layer of mucilage and a thin skin known as the parchment. The processing of coffee begins with the cherry harvested from the plant. Once it is harvested, the bean must be separated from the cherry without losing the aroma that is contained within the mucilage.
There’s been a lot of press recently, good, bad and ugly, about the roasted coffee bean, green coffee bean, and unroasted coffee beans. So what’s the truth – and what’s the difference between them?
What is Roasting?
Roasting brings out the aroma and flavor that is locked inside the green coffee beans. Beans are stored green, a state in which they can be kept without management of quality or taste. A green bean has none of the characteristics of a roasted bean — it’s soft and spongy to the bite and smells grassy.
Roasting causes chemical changes to take place as the beans are rapidly brought to very high temperatures. When they reach the peak of perfection, they are quickly cooled to stop the process. Roasted beans smell like coffee, and weigh less because the moisture has been roasted out. They are crunchy to the bite, ready to be ground and brewed.
Once roasted, however, they should be used as quickly as possible before the fresh roast flavor begins to diminish.
